Gin: Sheeps Whey (Hartshorn Distillery TAS)

Paired w/

– Sugarcane brined chicken pieces “char-cooked” over tallowood & ironbark wood w/ tamarind, lime, coriander reduction finished with fresh coriander.

– Heirloom tomato carpaccio w/ green ants, smoked maldon sea salt flakes & Byron bay co ages extra virgin olive oil.

2nd course…

Gin: Wild Gin (Kangaroo island Distillery SA)

Paired w/

– Prosciutto wrapped kangaroo loin w/ blueberry demi glaze & crispy basil.

– Char grilled vegetable terrine w/ balsamic glazed dutch carrots & salsa verde.

3rd course…

Gin: Bush apple gin (Seven Seasons Distillery SA)

– Maple walnut & brie baked apple
