WINNER WINNER CHICKEN DINNER
A special pop-up event lead by chefs Jay Elbrihi & Sam Barlett Roylance.
This dinner shares the produce of local leaders in agroecosystem farming approaches, including tree-range chickens from Misty Creek Agroforestry and produce from Living Agroecology.
The 8 course set-menu promotes an ethos of “If It Grows Together, It Goes Together” by sourcing most ingredients from singular farms. The menu is hyper local, hyper seasonal and low-waste.
Using all parts of chicken, creative set-menu highlights include
- Chicken skin mille-feuille with liver parfait and native raspberry
- Chicken chawanmushi, wasabi mustard, peas, cured yolk
- The Drumstick dessert- semifreddo and sweet chicken skin crumb
